Crispy Pork Belly with Savory Apple Hash

Great instant pot recipe for a crispy skinned pork belly. Cutting pork belly cook time in half. Serving it with a savory apple hash that perfectly compliments a pork belly cooked in apple cider and white wine.

I have been wanting to create a pork belly recipe that I really enjoyed. A tender pork belly takes time to cook creating a perfect opportunity to utilize my instant pot. My instant pot is really becoming one of my favorite kitchen gadgets especially during a busy week when time is precious. My pork belly recipe combines several of my favorite things: pork, apple, and bacon.

Preparation

One of my favorite stores to visit in NW Arkansas is the Spice and Tea Exchange off the Bentonville square. They have a plethora of spices that get your creative, foodie juices flowing. I did not venture too far from the norm but chose a nice smoked paprika that I combined with cumin, garlic powder, and onion powder. I seasoned the fatty side of pork belly with salt and pepper then seasoned with spice mixture.

Cook

I actually used the cooking method from Healing Gourmet’s Instant Pot Pork belly. Click here to see their method. I used my paprika season mixture. I also changed the cooking liquid for the crispy pork belly using instead apple cider and white wine. Healing Gourmet provides a great method for making the pork belly skin crispy. However, instead of using lard, I used a chipotle infused olive oil that I found at Cask & Grove who provide premium olive oils and vinegars. Cask & Grove is one of my new local favorite foodie haunts located in NW Arkansas off of the Fayetteville square. The chipotle olive oil and the smoked paprika seasoning marry well creating a mouth-watering, tender meat that melts in your mouth.

Apple Hash

I created a savory apple hash to serve along side the crispy pork belly. The savory apple side dish compliments the apple notes of the pork belly. Prepare the hash ingredients with 15 minutes left on the pork belly while it is in the instant pot. The hash can be cooked in the skillet while the pork belly is in the oven. I did not peel the apple as the skin adds texture and flavor. The bacon and onion transforms the apple, typically used for desserts, into a side dish that pairs well with pork. Crispy Pork Belly

Flavorful, crispy pork belly. Prepared in the instant pot. Meat so tender and juicy it falls apart.

Cook Time 1 hour 40 minutes
Resting Time 15 minutes

Ingredients
  

  • 1 pound pork belly
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1 Tbsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1 cup apple cider
  • 1 cup white wine
  • 2 Tbsp olive oil

Instructions
 

  • Season fatty side of pork belly with salt and pepper. 
  • Mix seasonings together and season fatty side of pork belly.
  • Add apple cider and white wine to instant pot. Place pork belly fatty side up in instant pot. Cook on high for 80 minutes. 
  • Around 15 minutes from the end of the cook time, preheat oven to 400 degrees. Add olive oil to cast iron skillet and let heat in preheated oven.
  • When instant pot has completed cooking, manually release pressure. Remove hot cast iron pan. Gently place pork belly fat side down and place in oven. Cook pork belly in oven for 20 minutes. Remove pork belly and let rest before slicing and serving.

Notes

* I used Chipotle flavored olive oil to add a little heat and extra flavor to the meat but regular olive oil could be used.

Ingredients
  

  • 1/2 cup bacon diced
  • 1/2 medium yellow onion diced
  • 2 cloves garlic minced
  • 3 medium Honey crisp apples diced
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice

Instructions
 

  • Cook bacon in medium skillet until begins to crisp. Add onion and garlic until onion begins to soften.
  • Add apples, apple cider vinegar, and lemon juice to skillet. Cover and simmer for 15 minutes
