Delicious side dish featuring fresh summer squash and zucchini! This Simple Veggie Squash is a flavorful compliment to dinner that utilizes fresh vegetables from the garden. It is the perfect one pot side dish for summer veggies.

I will admit sometimes I let the side dish slide and put all my attention on the main course. I always feel guilty because a delicious side dish really helps create a well balanced meal.

Squash and zucchini are not my favorite fresh vegetables. We grow them in the garden every year because my husband loves them. One of my favorite challenges is taking ingredients that I have not typically enjoyed and find recipes that change my mind.

I really don’t like food waste. I hate to let ingredients rot because I just don’t enjoy eating them. Whether it is canning them for later use or finding new and innovative ways to prepare them, it is own personal Mt. Everest to make use of these food. It is one of the attributes I most admire from my grandmothers, aunts, and mother who were raised in hard times. There tenacity and creativeness are impressive. Their knowledge of preservation and food preparation is a goal to which I aspire.

Simple Veggie Squash

In this spirit, I am featuring a recipe of my Aunt’s. Reluctantly, I decided to give this Simple Veggie Squash a try. Just looking at this dish, it looks bright and vibrant as well as hearty. I completely expected I would not like it as I typically find these types of squash dishes bland and tasteless.

Much to my surprise, the Simple Veggie Squash tasted as it looks, bright and vibrant. The perfect side dish that pairs well with a hearty beef entrée. It is full of flavor, and even better, simple. It is a one pot side dish.

The last thing I want in a side dish is a lot of prep. I usually have already put a lot of attention and prep in my main dish. I like my sides to be low maintenance but packed with flavor. This veggie squash is the perfect fit. All the ingredients go into one pot to simmer for an hour then ……. Enjoy!

Ingredients
  

  • 1 medium zucchini chunked
  • 1 medium yellow squash sliced, coarsely
  • 1 medium yellow onion sliced, coarsely
  • 1 medium green bell pepper sliced
  • 1 15 oz. can diced tomatoes
  • 1 8 oz. can tomato sauce
  • 1 stick butter salted
  • salt to taste

Instructions
 

  • Combine all ingredients and medium pot.
  • Bring to a simmer. Simmer for 1 hour until vegetables are tender.
