Bread Making

Bread making takes some practice but it is very basic. There are just a few simple ingredients: flour, salt, yeast, and water. Once you get a good combination, you must learn the “knead”. I start my bread in the mixer but I finish kneading with my hands. This is the only way I know the dough is right, by the feel of it in my hands.

Last is the rise. It is important to give the dough time. I let it rise twice. If I am making sandwich bread, I like for it to rise an inch or two above the loaf pan. I like height on my bread so I use a taller loaf pan. Like the one below.

When you have made a few successful loaves with the basics, you can begin to experiment with different flavors. The combinations are endless. There are different flavors, adding nuts, and adding fruits. I have now created two of own bread recipes, including the Homemade Honey Whole Wheat Bread below.

Bread Recipe

Anyone that follows my blog or social media (by the way, thank you and much appreciated) knows I love making homemade bread. In addition, I love creating my own recipes but putting together my own bread recipe seemed a little daunting. This year I decided to just get started with homemade wheat bread.

I prefer wheat bread to white bread. The nutty, wholesome flavor is perfect for a ham or turkey sandwich. My family loves to just eat it for a snack. After several failed attempts, tweaking bits of salt here and this type of flour there, I created soft, tasty Honey Whole Wheat Bread. Enjoy!

Honey Whole Wheat Bread

Soft and flavorful homemade wheat sandwich bread.

Cook Time 35 minutes

Ingredients
  

  • 1 packet active dry yeast
  • 2 1/4 cup warm water
  • 1 tbsp salt
  • 1/4 cup sugar
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 3 cups whole wheat
  • 3 cups all purpose flour
  • 1 tbsp oats if desired
  • 2 tbsp melted butter for brushing

Instructions
 

  • Pour yeast in mixing bowl. Pour warm water over yeast and add a pinch of sugar. Stir together. Let sit for 10 minutes until foamy.
  • Add salt, sugar, honey, and oil to yeast mixture. Slowly mix together.
  • Add 4 cups of flour to mixture and mix thoroughly. You may use a fork or dough hook on stand up mixer.
  • Add another cup of flour. Mix until the flour disappears and you have a sticky ball. Sprinkle flour on a flat surface. Place sticky ball of dough on floured surface. Continue to add the last cup of flour a tablespoon at a time while kneading.
  • Continue kneading and adding the last cup until you have a soft, pliable ball. (You may not use the whole cup). Approximately 10 minutes. Place your finger on the top of the ball and push in gently, if dough bounces back, it is ready.
  • Spray large bowl with non-stick cooking spray. Place dough in the bowl and roll gently in oil to coat. Cover and set in warm place.
  • Let dough rise for 1 hour or until doubled in size. Gently place dough on lightly floured surface and knead an additional 5 minutes forming another ball. Cut dough in half.
  • Flatten and stretch each half of dough into a rectangle, approximately 8×4. Beginning on long side, roll tightly and pinch seams together. Spray loaf pans with non-stick spray and place dough seam side down. Let rise an additional hour until the dough rises approximately an inch over the top of the loaf pan.
  • Preheat oven to 375 degrees. Melt 1 T of butter and brush the tops of the loaves gently. Sprinkle lightly with oats and sea salt. Bake for 30 to 35 minutes. Tap bread. If bread sounds hollow, it is done.
