I created this recipe one evening just throwing together ingredients I had around the house. Grits are an easy, affordable staple to have on hand that is easily jazzed up bit (aka let’s throw some cheese in there). On top of that, making this dish is quick for weeknights and easy as well, so it fits a busy schedule perfectly. Fresh bell peppers and garlic are always a tasty fresh vegetable staple that will add flavor to many dishes.
Sausage and Peppers with cheesy grits has ingredients easily modified to your flavor palette. For example, experiment with the sausage. I sometimes use andouille sausage in place of smoked sausage, which adds a little extra heat. Also if you are looking to dial down the spice, swap fire-roasted diced tomatoes for plain diced tomatoes. Another way this recipes shines, sautéing the sausage first and then the vegetables, it really adds a dept of flavor to the dish and makes the process both easy and quick for anyone in a hurry.

Sautéed Sausage & Peppers
Ingredients
- 1.5 – 2 pounds smoked sausage sliced
- 1 medium green pepper julienned
- 1 medium red pepper julienned
- 1 medium red onion diced
- 3 cloves garlic minced
- 1 14.5 ounce canned fire-roasted tomatoes diced
- 1 15 ounce tomato sauce
- 1 Tablespoon Cajun seasoning
- 1 teaspoon kosher salt
- 1 teaspoon cracked pepper
- 1 Tablespoon olive oil
Instructions
- Heat oil in skillet. Brown sausage, approximately 5 to 7 minutes. Remove from skillet and set aside.
- Add onion and garlic. Season with salt and pepper. Sauté approximately 2 to 3 minutes, scraping brown bits from the bottom of skillet.
- Add bell peppers and sauté until soft, approximately 2 to 3 minutes.
- Add the sausage, tomatoes, tomato sauce, and seasoning. Stir together.
- Bring to a boil and reduce to simmer. Cover and simmer for 15 minutes, stirring occasionally. Enjoy!
Notes
- Serve over rice or cheesy grits
- Prepare rice or grits while sausage is browning.
