Sautéed Sausage & Peppers

Ingredients
  

  • 1.5 - 2 pounds smoked sausage sliced
  • 1 medium green pepper julienned
  • 1 medium red pepper julienned
  • 1 medium red onion diced
  • 3 cloves garlic minced
  • 1 14.5 ounce canned fire-roasted tomatoes diced
  • 1 15 ounce tomato sauce
  • 1 Tablespoon Cajun seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon cracked pepper
  • 1 Tablespoon olive oil

Instructions
 

  • Heat oil in skillet. Brown sausage, approximately 5 to 7 minutes. Remove from skillet and set aside.
  • Add onion and garlic. Season with salt and pepper. Sauté approximately 2 to 3 minutes, scraping brown bits from the bottom of skillet.
  • Add bell peppers and sauté until soft, approximately 2 to 3 minutes.
  • Add the sausage, tomatoes, tomato sauce, and seasoning. Stir together.
  • Bring to a boil and reduce to simmer. Cover and simmer for 15 minutes, stirring occasionally. Enjoy!

Notes

  • Serve over rice or cheesy grits
  • Prepare rice or grits while sausage is browning.
