canned fire-roasted tomatoes

tomato sauce

Cajun seasoning

kosher salt

cracked pepper

olive oil
Instructions
Heat oil in skillet. Brown sausage, approximately 5 to 7 minutes. Remove from skillet and set aside.
Add onion and garlic. Season with salt and pepper. Sauté approximately 2 to 3 minutes, scraping brown bits from the bottom of skillet.
Add bell peppers and sauté until soft, approximately 2 to 3 minutes.
Add the sausage, tomatoes, tomato sauce, and seasoning. Stir together.
Bring to a boil and reduce to simmer. Cover and simmer for 15 minutes, stirring occasionally. Enjoy!
Notes
Serve over rice or cheesy grits
Prepare rice or grits while sausage is browning.
