This easy weeknight meatloaf is not only simple and delicious but only 5 ingredients! Great for a busy weeknight. Just pop it in the oven and go!
Meatloaf gets a bad wrap. I never quite understood it because my mom’s meatloaf was one of my favorite meals. This meatloaf is my mom’s recipe. It is so delicious my picky daughters will eat it. Preparation
I typically use whole wheat bread. It makes feel like I am attempting to be healthy. I usually just use sandwich bread and pinched it up with my hands into bite sized pieces. It is a recipe that can be easily doubled which I often do because my family loves this dish and always go back for seconds.
I take all 5 ingredients in place them in a 9×9 baking dish, so I don’t have extra dishes to wash. I mix the ingredients, pat it out to fill the dish, and drizzle with ketchup, voila!

Easy Weeknight Meatloaf
Ingredients
- 1 pound ground beef
- 1 packet dry onion soup mix
- 2 slices bread pinched up
- 1 egg
- 1/4 cup ketchup plus 1T for drizzling on top
Instructions
- Preheat over to 350 degrees.
- Place all ingredients in 9×9 baking dish. Mix all ingredients together.
- Pat meatloaf mixture out in dish, filling the dish. Drizzle with ketchup.
- Bake meatloaf for 1 hour.
