Preparation
This recipe is a “set and forget”. The only active part of the recipe is the prep and searing. The prep can be done ahead of time. I used the sear setting on the instant pot so I did not dirty another pan. Next, all the ingredients go into the instant pot for 40 minutes. The aroma is wonderful. The meat falls off the bone. After the short ribs finished cooking, I whisked in a couple of tablespoons of flour to thicken the sauce. The sauces makes the perfect gravy for meat and potatoes. While the short ribs were cooking, I made mashed potatoes as a side.
The aroma and flavor bring back fond memories reminiscent of my mom’s Sunday dinner pot roast that would cook while we were at church. Instant Pot Beef Short Ribs
Ingredients
- 2 pounds beef short ribs
- 1 tsp kosher salt
- 1 tsp cracked pepper
- 2 tbsp olive oil
- 2 medium carrots diced
- 1/2 medium white onion diced
- 1 green bell pepper diced
- 2 cloves garlic minced
- 1/2 cup red wine
- 1 cup beef broth
- 1 cup crushed tomatoes
- 2 dried bay leaves
- 2 tbsp flour
Instructions
- Salt and pepper short ribs. On sear setting in instant pot, heat olive oil. Brown short ribs on each side 2 to 3 minutes.
- Remove short ribs. Add carrots, onion, bell pepper, and garlic to olive oil, Cook 3 to 4 minutes until fragrant and soft.
- Add wine, broth, tomatoes, and bay leaves and stir together. Add short ribs. Cook on High for 40 minutes.
- (Ensure you release pressure). Remove ribs. Remove bay leaves and discard. Add 2 T of flour and whisk 3 to 4 minutes until sauce thicken. Serve thickened sauce over short ribs.
