Instant Pot Tacos ….. Korean Beef

Who has given in to the Instant Pot craze? I broke down and bought one on a whim. I found one on sale and thought why not! If you work full-time and have a family to feed, I advocate investing in an instant pot. The instant pot has the convenience of a slow cooker but with less time invested. I love my crock pot but in the morning rush, I often just skip starting the crock pot dish in my hurry to get out the door then regret it in the evening when I am scrambling for a meal. The instant pot solves this problem. In about 30 minutes to an hour, we can sit down to good, delicious meal. The hour I save using my Instant Pot, I am able to get the kids bathed and help with homework, who doesn’t need an extra hour a day. Below you will find one of the first instant pot recipes I have tried so far, and it was well received in my house and quite yummy.

Korean Beef Tacos

I found  this one on Pinch of Yum. I highly recommend this food blog. I tried the Korean Beef Tacos on Pinch of Yum. One of the reasons I like this recipe and this blog are the options. Pinch of Yum offers several options to get to the end of result. This is helpfully for any on the go home cook. I chose to use sirloin for my tacos. Definitely worth the extra cost, this meat was so tender and flavorful. I did not have the time, nor did I plan ahead, to marinate the meat. The flavor infused well largely in part, I believe, to the instant pot cooking method. There is also the option of using Sriracha mayo or Yum Yum sauce. I chose Yum Yum sauce because I am a huge fan and typically have it on hand for shrimp tacos. The meat was tender and the flavors blended perfectly. There were no leftovers. These Korean Beef Tacos will be place in my regular dinner lineup. It is a must try!
