Chicken Ranch Tacos ……… Taco Tuesday!

This recipe is not your average taco. I have eaten tacos and burritos with ranch sauces that I have really enjoyed, but I have never been able to duplicate the flavor at home, until now. This is the first recipe for Ranch Chicken Tacos where the flavor of the ranch sauce met my expectations. I will make this again and again!

This ranch sauce was a mixture of sour cream, ranch dressing, salsa, and taco seasoning. It had the great ranch flavor that I personally love with the right amount of Mexican flare. The recipe came from one of my favorite recipe websites, Allrecipes.com. I made a few small changes and additions to the Ranch Chicken Taco recipe. The recipe calls for corn tortillas but my family prefers flour tortillas. I didn’t use leftover rotisserie chicken because I had chicken breasts in the freezer. I cooked the chicken on the stove and shredded the chicken. Additionally, I peeled and diced about 6 potatoes into 1/2 cubes and fried the potatoes to a golden brown.

IMG_20151207_183315370Build up your tacos with your favorite ingredients and top off with the ranch sauce. When cooking my chicken, I tossed in an extra chicken breast that I didn’t toss with taco seasoning. I was able to layout some chicken and the small cubed fried potatoes for my 1 and 4 year old. Anything that I can cook fresh and easily for the girls along with my meal without a lot of additional work is a plus on a weeknight after a long day at work. Definitely try this at home and enjoy!

On a side note, I want to rave a little about Allrecipes.com. I have used this recipe website for a long time, and I subscribe to the daily recipe. The website is user-friendly. It is easy to sign up and save recipes to your  favorites. If you are like me and tend to change up a recipe, then make it later down the road and forget the what you changed, this website is ideal. It offers a place to make quick notes about the recipe that is saved to your favorites, so users can return easily to review the changes to the recipe. Additionally, I always read the comments under the recipe where users post their changes, what worked, and what didn’t work. It is a very friendly, informative culinary community.
