The Sandwich …….. not just bologna anymore!

Growing up, sandwiches were for the nights that my mom didn’t want to cook. They usually consisted of bologna, ham, or maybe even some fried Spam and potato chips. Don’t get me wrong, I do enjoy the occasional bologna sandwich with a fresh tomato, but I have also realized that you can do so much more with a sandwich!

Smoked Sausage with Grilled Onions, and Fried Mac and Cheese

I decided to experiment a little. I was inspired by a show I watched on Food Network about lady in Atlanta, Georgia who owns and operates Delia’s Chicken Sausage Stand. I have never been to this restaurant but I would like to go one day. She seems like a very humble lady who cooks with fresh ideas and fresh ingredients. I made a smoked sausage sandwich with grilled red onions, fried mac n cheese, and a homemade “comeback” sauce. Ms. Delia makes her own “comeback” sauce. I don’t recall what Delia puts in hers but I searched for comeback sauce and made my own version. The mac and cheese was homemade and leftover from another meal. I needed to do something different with it besides continually reheating it. I cut it in thin slices and grilled the slices on a griddle until golden brown and a little crunchy. Overall, this was a great sandwich! It was very filling, and the sauce had just the right amount of kick. I made two for my husband. He is a hearty eater and could barely finish both sandwiches.

Pork Sandwich with White BBQ Sauce

I made another great sandwich this week. This sandwich was a recipe from Giada De Laurentis. It is her Pork Sandwich with White Barbeque Sauce. This recipe was tasty and flavorful. The pork chops were juicy. My 4 year old even the pork chops just cut up on a plate. She told me the meat was delicious. Delicious enough that I told her if she finished her broccoli she could have more meat, and she did! Any recipe that can accomplish this feat is worth repeating. I had been wanting to try a recipe with white barbeque sauce which is surprisingly easy and you probably have the ingredients in your pantry. In fact, you probably have all these ingredients at hand. Simple ingredients for a fabulous sandwich. Definitely try at home.
