Apple Stuffed Chicken Breasts with Bacon and Gouda & Spinach Puree

Tonight, I decided to experiment a little. This is a quick stuffed chicken recipe. The chicken was stuffed with gouda, bacon, apple, and seasoned bread crumbs. The chicken breast is cut in half width-wise and pounded with a mallet to about a 1/4 inch thickness. Careful when pounding out your chicken, you don’t want to get the breast so thin that the stuffing ingredients fall through when you roll your chicken. Also make sure you wrap your breast with plastic wrap when you are pounding your chicken.

Goat Gouda – Kent Walker Cheese

I used some great fresh local ingredients. Starting with red delicious apples that I picked straight from my Dad’s orchard a couple of hours prior. I also included a gouda goat cheese made by a local artisan cheese maker, Kent Walker. I diced up about 5 slices of bacon and fried up the bacon in a pan. When bacon was browned, I added the apples that I had peeled, cored, and cubed. I cooked these ingredients about 3 minutes. I then mixed these ingredients in a medium mixing bowl with the shredded gouda and seasoned bread crumbs. I spooned the mixture onto the chicken breasts, rolled the breasts, and secured with toothpicks. In the same pan used to cook the bacon and apple, I added a little olive oil and heated the oil. Once hot, I seared the chicken on both sides on medium heat. I added a little white wine vinegar, carefully! Then I lowered the temperature to a nice simmer and put the lid on the pan, letting it cook for about 15 to 20 minutes.

While the chicken cooked, I made a quick spinach puree. I added whipping cream, ricotta, butter, minced garlic, salt and pepper to the cooked spinach and pureed in a food processor. One note, I have never made any kind of puree before so I was excited to try one. This was good but I definitely haven’t mastered purees yet. So if anyone has a great puree recipe or any pointers from their experiences with purees, let me know. I let the chicken rest for about 10 minutes then removed the toothpicks and sliced the chicken.
