Quick & Easy Bacon Jam

bacon
diced

unsalted butter

yellow onion
diced

tsp
kosher salt
1/4
cup
brown sugar
light
1/4
cup
sherry vinegar
2
tsp
apple cider vinegar
1
pinch
cayenne
Instructions
In a medium pot, sauté diced bacon until almost crispy. Drain bacon grease leaving approximately 1 teaspoon.
Stir in butter, onion, salt. Cook until onion is soft, approximately 7 minutes.
Stir in remaining ingredients. Cook until thickens into a "jammy" consistency.
Notes
The bacon jam is very versatile. My favorite use is for a cheeseburger topping.
