Grilled Sweet Potatoes
Savory, melt and your mouth, grilled sweet potato. Perfect side dish for grilled salmon!
Ingredients
- 1 pound sweet potatoes peeled, cut in bite size cubes
- 1 tbsp olive oil
- 1 tsp kosher salt
- 2 to 3 cranks of cracked pepper
- 1 tsp parsley
- Fresh parsley chopped for garnish
Instructions
- Heat grill to around 350 to 375 degrees.
- Toss all ingredients in medium bowl until combined.
- Using aluminum foil, tear off long rectangular piece of foil. Fold over once. Place sweet potatoes towards one end of rectangle leaving about a one inch border. Fold foil over the top of potatoes. Fold over all of the edges, folding tightly to seal packet.
- Place packet of sweet potatoes on grill. Cooking potatoes for 30 minutes, flipping the packet every 10 minutes.
- Garnish with fresh, chopped parsley.
