Blueberry Cobbler with Cornmeal Sugar Cookie Crust

This cobbler recipe has a delicious twist by changing up tradition and using a cornmeal sugar cookie dough as a crust. This blueberry cobbler with cornmeal sugar cookie crust by Vivian Howard is surprisingly easy to prepare and unexpectedly tasty.

Blueberry Season

It is blueberry season at our house. If you would like to read a little about the history of our blueberry patch and find a great recipe, check out my post for Aunt Sue’s Blueberry Bread. Since our blueberry patch has matured, we have so many blueberries. I always have to freeze some for use throughout the year. But that is okay, Aunt Sue’s Blueberry Bread ends up being a great Christmas gift!

Quick tip, I do not wash my blueberries before I freeze them. It helps prevent them from sticking together and makes them quick and easy to store away after picking. When I get ready to bake with them, I put the frozen blueberries in a colander and wash them which also allows them to thaw easily.

With so many blueberries, I am always looking for new recipes to try. Vivian Howard had some great ones in her cookbook Deep Run Roots. Here is what I really like about Howard’s Deep Run Roots. Vivian Howard breaks down this cookbook by ingredient. There is a whole section on blueberries. I think this idea is great especially if you have a garden and deal with large amounts of one food at a time. Howard’s recipes also have unique flavors and twists, such as her pork recipe cooked with watermelon (which is amazing by the way)! Her cookbook provides tip on canning and preservation as well as providing family memories for each recipe which strikes a heartfelt chord with me.

Preparation of the blueberry filling

I recently made her Blueberry Cobbler from Deep Run Roots. This cookbook has inspired several of my own recipes, but I just used her original recipe from her cookbook on this cobbler. However, I did take a few shortcuts. I don’t usually take shortcuts when I am trying recipes for the first time, but I needed to save some time. I just recently had my 3rd daughter and she is 6 weeks old so anything I can do to save a little time is a blessing.

The recipe calls for the blueberry cobbler filling to set for 2 hours or overnight then to strain the juice and reduce on the stove creating a syrup to mix back into the filling. I combined the blueberry, sugar, and lemon juice and mashed it up a little bit then used them right away. It still made a juicy, thick cobbler filling just a little quicker and with less steps.

Cornmeal Sugar Cookie Crust

Next I made the cornmeal sugar cookie crust for the blueberry cobbler. I had never heard of incorporating cornmeal in this manner and really this is what lead me to try this recipe. Directions state to cream sugar and butter in mixer and then add in dry ingredients. I actually ended up placing all of the ingredients in the food processor and mixing them together. I recently bought a good food processor, and I love it! There are so many surprising uses, and it is a time saver. I am actually not sure why I used the food processor instead of the mixer probably because I had read a lot of recipes that day and I was sleep deprived. It actually was quick and worked just fine.

The cornmeal sugar cookie dough was a bit stickier than I anticipated. My plan was to use my cookie dough baller but the dough was too sticky. It may have been because I did not let it rest or refrigerate. I used a spoon and dropped the dough randomly in balls across the top of the filling. I greased the bottom of a glass, coated the glass in sugar, and then pressed the glass on top of the dough balls to flatten out the crust. If you don’t coat the glass in sugar, the dough will stick.

Although I did improvise in a couple of areas, this Blueberry Cobbler with Cornmeal Sugar Cookie Crust was a big hit at my house and did not last long. I highly recommend this recipe and Howard’s cookbook. Enjoy!
