I revamped my stuffed chicken breast recipe. This filling for this stuffed chicken breast is really bright and flavorful. I enjoy making stuffed chicken breasts because I am not a fan of thick chicken breasts. Stuffing a chicken adds a lot of flavor to what can be a dull, boring chicken breasts.
Stuffing
The apple, gouda, and bacon pair wonderfully together. I love bacon, and it adds some much flavor to any recipe. It is one of my favorite ingredients and really one of my favorite meats to eat. It is not uncommon for us to go through a couple of pounds of bacon in one week! When I chose to use gouda, I walked around the local farmer’s market looking for inspiration.
Gouda pairs well with the bacon and apple. Cheese is another favorite food, and I like to try new varieties.
One of my tricks for slicing and dicing apples is using a kitchen tool like the Oxo Ez Grip 8 Slices Apple Divider. This apple slicer will quickly slice your apple making it easier to dice. I cooked the apples only 2 to 3 minutes with the bacon so the apples are still a little crunchy adding texture to the stuffing.
Cooking
I had initially used toothpicks to close the rolled chicken breasts which is not ideal. Now, I always keep kitchen twine which is so much easier when making any stuffed meat. Seasoning the stuffed chicken breasts and searing the breasts adds a nice flavorful, crispy skin. I have been experimenting with infused olive oils. Instead of using regular olive oil, I used a chipotle flavored olive oil to add another element to recipe. I bought my olive oil at one of the local shops in Northwest Arkansas, the Cask & Grove. It is important to let the chicken rest 10 minutes and to use a very sharp knife to slice the stuffed chicken breasts. If you don’t use a sharp knife, the chicken may fall apart. I always use my Cutco knife if I need a really sharp knife.
This is a great easy recipe for stuffed chicken breasts. Surprisingly, my four-year old loved it, so it definitely passed the test at my house. Enjoy!
Stuffed Chicken Breasts with Apple, Gouda, & Bacon
Ingredients
- 6 slices of bacon cubed
- 3 medium red delicious apples peeled, cored, and diced
- 1/2 cup shredded gouda
- 1/2 cup of seasoned bread crumbs
- 1 lb. boneless chicken breasts halved lengthwise and pounded into 1/4 inch think
- 1 tsp cracked pepper
- 1 tsp kosher salt
- 2 T olive oil
- 2 tbsp white wine vinegar
Instructions
- Fry bacon in a medium pan until browned. While the bacon is frying, mix together the bread crumbs and gouda then set aside. Add the apple to the bacon and cook for 2 to 3 minutes. Add bacon and apple to the bread crumb and cheese mixture and mix together thoroughly.
- Cut chicken breasts lengthwise but not all the way through so the breasts are butterflied. Place saran wrap over chicken breasts and pound breasts until they are about 1/4 to 1/2 inch thick. Spoon mixture onto the pounded chicken breasts. Roll chicken in jelly roll fashion and tie with cooking twine. (I usually tie on both ends and in the middle.
- In the same pan used to fry the bacon, drain bacon grease. Heat olive oil. Season chicken breasts with salt and pepper. Sear rolled chicken on both sides about 3 to 4 minutes per side on medium heat so chicken is browned on all sides. Add white wine vinegar (carefully). Lower temperature to low medium heat. Cook chicken turning occasionally so it does not burn, approximately 20 to 30 minutes depending on the thickness of the chicken. When chicken is cooked thoroughly, remove from pan and let rest for 10 minutes. Remove twine and slice with sharp knife.
Notes
*You can use a stuffing mix instead of seasoned bread crumbs which added just a little extra flavor.
* Instead of plain olive oil, I used a flavor infused Chipolte olive oil for cooking the chicken.
