I love making everything from scratch. I gives me a sense of accomplishment. That being said, sometimes I ain’t got time for that! So when my toddlers are pulling on me begging for cookies when I want to do is sit down, I have a “go to” short and sweet cookie recipe. Sometime, long ago, my mother found a recipe for cake mix cookies. I don’t know where, and I am not even sure that I am making them the same anymore. But here is what I do:

Fluffy goodness!
Cake Mix Cookies
1 box of cake mix
1 egg
1/3 cup of vegetable oil
1/3 cup of water
Preheat oven to 375 degrees. Mix all the ingredients in medium mixing bowl. Spoon cookie batter, about 1 tablespoon, out on greased cookie sheet. Bake for 10 to 14 minutes. Cool on cookie rack. Enjoy!

With marshmallows & chocolate chips
This recipe is so quick and easy. It is also open for interpretation. Feel free to experiment with your favorite cake mix. I like making my cakes from scratch but I always have a few boxes of cake mix in my pantry for emergencies. I have also tossed chocolate chips or marshmallows in the batter as well to add a little extra flavor. Great versatile recipe that allows you to enjoy your cookies within 20 minutes!
