Oven Baked Spicy Pork Ribs with Bok Choy Salad

Ribs are not just for summer time grilling. Another great way to cook ribs is roasting them in the oven. My husband is a huge rib fan, and he recently came home from the grocery store with a huge box of pork ribs. I was stuck inside the house with the cold weather so I experimented with a rib marinade and cooked the ribs for a few hours.

I generously seasoned about a pound of ribs with Emeril Lagasse’s Creole mix. I had mixed the blend previously and still had some stored in an airtight container. I thought I might as well use up some of blend. I then seared both sides of the pork rib in hot oil about 2 to 3 minutes each side. Using the Spicy Chili Marinade recipe below, I let the ribs marinate for 2 to 3 hours. The marinade below is a sweet, spicy marinade. It is definitely a hearty sauce. Finally, I baked the pork rib for about 2 1/2 hours on 250 degrees basting the ribs every 30 minutes.

IMG_20160201_174037620I served the pork ribs with a mashed potatoes and a Bok choy salad. I cut the Bok choy into 1 inch pieces. I also julienned 3 small  sweet peppers and one bell pepper. I chopped two cloves of garlic and thinly sliced half an onion. In a wok, I heated a couple of tablespoons of olive oil. I then added in the peppers and onions cooking them until they are soft, approximately 5 to 7 minutes. I tossed in the Bok choy and garlic with a splash of fish sauce, soy sauce, and toasted sesame oil. I cooked it until the Bok choy was wilted and the seasoned with salt and pepper.

 

Spicy Chili Marinade

12 ounce bottle of chili sauce

6 ounces of beer, (I used Core Leghound)

1/4 cup of barbeque sauce (I used Sweet Baby Ray’s)

1/4 cup of brown sugar

3 T of plum jelly

4 T of mustard

1 T of molasses

2 T of Worcestershire sauce

1 T of steak sauce

1 T of Ott’s dressing

1 tsp of garlic powder

1 tsp of onion powder

salt and pepper to taste

Heat all the ingredients on medium until simmering and sugar is completely dissolved. Pour half the sauce over the ribs and let marinate 2 to 3 hours. Cook ribs on 250 degrees for 2 1/2 hours. With the left over sauce, baste ribs every 30 minutes until done.
