This sandwich is a quick and yummy dinner fix. This is an Emeril Lagasse Prosciutto and Mozzarella Panini recipe from Food Network. I did make a change to the recipe.
The recipe calls for a vinaigrette of olive oil, balsamic vinegar, garlic with salt and pepper. I did this as instructed. I also used prosciutto and mozzarella. I used ciabatta bread because it is what I had on hand. Instead of the roasted red peppers, I spread a very small layer of red pepper relish.
I actually really enjoyed this sandwich. I love hot sandwiches in the winter time. Only use the red pepper relish if you really like something spicy. I had one left over that I ate the next day. I think the relish had temper the heat by the next day. I cooked my sandwiches on the griddle until the cheese had melted. Definitely try this at home!
