Grilled Sweet Potatoes
Savory, melt and your mouth, grilled sweet potato. Perfect side dish for grilled salmon!

- 1 pound sweet potatoes peeled, cut in bite size cubes
- 1 tbsp olive oil
- 1 tsp kosher salt
- 2 to 3 cranks of cracked pepper
- 1 tsp parsley
- Fresh parsley chopped for garnish
Heat grill to around 350 to 375 degrees.
Toss all ingredients in medium bowl until combined.
Using aluminum foil, tear off long rectangular piece of foil. Fold over once. Place sweet potatoes towards one end of rectangle leaving about a one inch border. Fold foil over the top of potatoes. Fold over all of the edges, folding tightly to seal packet.
Place packet of sweet potatoes on grill. Cooking potatoes for 30 minutes, flipping the packet every 10 minutes.
Garnish with fresh, chopped parsley.
