Instant Pot Beef Short Ribs

Ingredients
  

  • 2 pounds beef short ribs
  • 1 tsp kosher salt
  • 1 tsp cracked pepper
  • 2 tbsp olive oil
  • 2 medium carrots diced
  • 1/2 medium white onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1/2 cup red wine
  • 1 cup beef broth
  • 1 cup crushed tomatoes
  • 2 dried bay leaves
  • 2 tbsp flour

Instructions
 

  • Salt and pepper short ribs. On sear setting in instant pot, heat olive oil. Brown short ribs on each side 2 to 3 minutes.
  • Remove short ribs. Add carrots, onion, bell pepper, and garlic to olive oil, Cook 3 to 4 minutes until fragrant and soft. 
  • Add wine, broth, tomatoes, and bay leaves and stir together. Add short ribs. Cook on High for 40 minutes. 
  • (Ensure you release pressure). Remove ribs. Remove bay leaves and discard. Add 2 T of flour and whisk 3 to 4 minutes  until sauce thicken. Serve thickened sauce over short ribs.

Notes

Served short ribs on mashed potatoes. The sauce makes excellent gravy!
