Chorizo and Potato Tacos… A Nice Twist for Taco Tuesday!

I love Mexican food! I love Margaritas! I have made different types of dips, enchiladas, and tacos. I wanted to try something a little different, and I found this recipe for chorizo and potato tacos. This recipe is easy because it is very likely that you have everything in your pantry.

The chorizo is made with ground pork and spices. I never used to buy ground pork but I recommend always have some ground pork in your freezer. Ground pork is versatile and affordable. Another one of my favorite recipes with ground pork is Thai Burgers with Sriracha mayo, but I will save that recipe for another day. Second, potatoes are always in your pantry. Most of the spices required are typically kitchen staples.

Cooking the potatoes is the time consuming part of this recipe. You cook the potatoes until tender and roughly mash the potatoes. I used Yukon gold potatoes. The first thing the potatoes on to cook. While the potatoes cooked, I mixed together the chorizo and cut up the onions. If you don’t like your food spicy, be cautious with your peppers. After the potatoes are cooked and roughly mashed, you fold the potatoes into the chorizo mixture. The recipe states to use two skillets and firmly mash the potato and chorizo mixture into the skillet. The recipe also states to not flip the mixture for 5 minutes and then flip in sections mashing back into the skillet. Initially, I thought I would dump the mixture in one large skillet and cook thoroughly. Don’t do it. Follow this recipe. It does make a difference in the outcome.

I cooked about 2 pounds of ground pork. This recipe made a large meal. We had enough food left over for a couple of lunches and one quick supper night after soccer practice. The flavor was great. Serve it with a Mexican beer or Margarita. This is a definite must try at home.
