Roasted Spaghetti Squash…..Simple, Easy, Healthy

IMG_20151011_133034513Roasted spaghetti squash is simple, easy, and healthy. I will throw in one more, cheap. I bought a spaghetti squash at the grocery store this weekend for 99 cents. One medium squash made approximately 4 decent size servings. It is also very versatile. Do you want it as a meal or side dish? I had it as my meal, and I could barely finish a helping. It was so hearty. However, you could easily throw one squash in the oven and serve it as a nice side dish. Depending on how you dress the squash, it is a great dish for those calorie crunchers and Whole 30 enthusiasts. No one else in your family like squash? Don’t let this top you. Split the helpings up in separate containers, and you have a great quick snack or lunch for the week

This is the first time I have ever made spaghetti squash. I was feeling lazy Sunday at lunch time but still wanted to have a gourmet lunch. Here is what I did:

  • Take one medium squash.
  • Stab it a few times with a  knife, carefully!!!
  • Bake it in the oven at 350 degrees for about 1 hour 15 minutes.
  • Cut the squash in half, lengthwise.
  • Spoon out the seeds.
  • Take a fork and rake through the squash until it makes a spaghetti like texture.
  • Voila! Done!
Serve the squash however you prefer. Salt and pepper your squash. I added some garlic powder, butter, and parmesan cheese. If you like, just serve it with the salt, pepper, and a little olive oil. Of course, I had a glass of chilled white wine with my dish. Note on chilling your wine, make sure you remove the chilled bottle from the refrigerator about 30 minutes before you are ready to serve it. Definitely enhances the flavor.
